Grilled sardines with warm tomato vinaigrette

Caught off the Cornish coast by fisherman Stefan Glinski and his team, M&S sardines – July’s fish of the month – are sustainably sourced, high in essential omega-3 fatty acids and have a fantastic depth of flavour. 

Grilled sardines with warm tomato vinaigretteReady in: 30 minutes
Serves: 4

Ingredients:
- 400g pack vine-ripened Rosa tomatoes
- 6 tbsp olive oil
- 4 spring onions, finely chopped
- 1 small garlic clove, finely chopped
- 1 tbsp sherry vinegar
- pinch of sugar
- 3 tsp chopped fresh chives
- 12 fresh sardines

Method:

1) For the vinaigrette, score a cross in the base of each tomato. Put in a heatproof bowl, cover with boiling water and set aside for 2-3 minutes. Drain well; when cool enough, peel away the skins. Halve the tomatoes, remove the seeds, then dice the flesh.

2) Heat 5 tbsp of the oil in a small pan and add the onions and garlic. Cook gently for 1 minute, then add the tomatoes and cook for a further 2 minutes. Stir in the vinegar, sugar and chives; season, then set aside.

3) Heat the grill to high. Brush the sardines with the remaining oil and lay on a foil-lined grill rack. Grill for 3-4 minutes each side, until cooked through. Spoon over the vinaigrette and serve with crusty bread or new potatoes.

Per serving: 280 calories, 24.7g fat (4.2g saturated), 0.16g salt.
