8 clementines, 6 peeled and halved, 2 juiced
4 tbsp caster sugar
5 cardamom pods, lightly bruised
Â½ vanilla pod, seeds removed and retained
knob of butter, cut into small cubes
3 organic honey and oat cookies, roughly crushed
ice cream, custard or cream, to serve
1. Heat the oven to 200Â°C/400Â°F/gas mark 6(180Â°C for fan ovens). Place the clementines in a baking dish cut side up, so they fit snugly.
2. Mix together the clementine juice, sugar, cardamom pods and vanilla seeds. Pour over the clementines and tuck the vanilla pod in between. Dot over the butter and roast for 10 minutes.
3. Sprinkle over the crushed cookies and return to the oven for a further 5 minutes or until the biscuits turn golden.
4. Serve with the syrupy juices and your choice of ice cream, custard or cream.
