Baked clementines

Baked clementines with cardamom-infused syrup is a great recipe for using up any stray clementines you have at this time of year. Turn them into a family favourite in this delicious, lightly spiced dish.


Preparation: 5 minutes
Cooking: 15 minutes
Serves: 4

Ingredients

8 clementines, 6 peeled and halved, 2 juiced
4 tbsp caster sugar
5 cardamom pods, lightly bruised
½ vanilla pod, seeds removed and retained
knob of butter, cut into small cubes
3 organic honey and oat cookies, roughly crushed
ice cream, custard or cream, to serve

Method

1. Heat the oven to 200°C/400°F/gas mark 6(180°C for fan ovens). Place the clementines in a baking dish cut side up, so they fit snugly.

2. Mix together the clementine juice, sugar, cardamom pods and vanilla seeds. Pour over the clementines and tuck the vanilla pod in between. Dot over the butter and roast for 10 minutes.

3. Sprinkle over the crushed cookies and return to the oven for a further 5 minutes or until the biscuits turn golden.

4. Serve with the syrupy juices and your choice of ice cream, custard or cream.
