Fire roasted tomato sausage tray bake

As advertised on TV, a twist on the classic sausage bake – made using our Terribly Clever range – this dish is wholesome, hearty and, importantly, easy to make!Ā 

Fire roasted tomato sausage tray bake

Serves: 4
Ready in: 35-40 minutes

Ingredients

500g butternut squash, peeled and diced into 1˝ cubes
400g red onion and red pepper (roughly chopped)
4 tbsp olive oil
1 pack M&S traditional cumberland sausages
1 Jar Terribly Clever Fire Roasted Tomato Tray Bake for sausages

Method

1. Preheat the oven to 200°C fan / 220°C conventional / gas mark 7.

2. Heat 1 tbsp of oil and cook the sausages until evenly brown. Remove from the pan and set aside.

3. Add the butternut squash and 2 tbsp oil to a large roasting dish. Roast for 10 minutes.

4. Combine the remaining olive oil with the vegetables, sausages and the jar of paste. Add to the butternut squash and mix thoroughly.

5. Cover with foil and bake for 15 minutes.

6. Remove the foil and cook for a further 10 minutes.

7. Spoon on to a serving plate and serve immediately.

    This recipe sauce is delicious and a great favourite in our house. HOWEVER it certainly does not need 4 tablespoons of oil adding as in the above recipe. Use about 1 teaspoon to coat the buttrnut squash, and 1 teaspoon or less to fry the sausages. That’s all that is required. And you save 400 hundred calories.
    I’d also say that it needs more like 45 minutes total cooking in the oven not 25.

    Sounds absolutely lovely, but I have a question. As I live in Germany can I order your Terribly clever range over the internet. I know you do deliver to Germany, my postman will attest to that, and I have had bottles delivered, glass containers too. It is all bubble wrapped and if I accept responsibility should any accidents (unlikely though that is) happen, couldn,t you send it by post?
